Ingredients

  • 1/2 cup milk
  • 1/2 cup sugar
  • 2 cups Atta
  • 1/4 teaspoon salt
  • 1/2 cup warm melted ghee
  • Vegetable oil, for frying

Preparation

  1. In a small pot over low flame, heat the milk and sugar until the sugar dissolves. Set aside.
  2. In a mixing bowl, add the flour, salt, and ghee. Rub together until the mixture resembles wet, sandy crumbs.
  3. Add the milk mixture in batches and knead into a soft, smooth dough.
  4. Pinch off portions of dough and roll into 1/4–1/2-inch-thick circles or squares.
  5. Using a sharp knife, cut into diamonds or 1-inch squares.
  6. Heat oil to approximately 325°F (163°C).
  7. Fry the pieces until lightly golden.
  8. Drain on paper towels and serve.
