Greek Chopped Rice Salad

Ingredients

  • 1 cup Basmati Rice
  • 1 small cucumber, diced
  • 1/2 red onion, diced
  • 1 medium tomato, diced
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/3 cup crumbled feta
  • 1/3 cup Kalamata olives
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 teaspoon minced fresh oregano (or 1/4 teaspoon dried)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper

Preparation

  1. Combine rice and 2 cups of water in a medium saucepan. Bring to a boil, then cover and reduce heat to a simmer. Cook until tender, about 20 minutes.
  2. Once cooked, spread the rice out on a plate to cool completely.
  3. In a medium bowl, toss together the cooled rice, cucumber, onion, tomato, chickpeas, feta, olives, vinegar, oil, garlic, oregano, salt, and pepper.
  4. Serve at room temperature or chilled.
