Modi Serves World Leaders A Vegan Gala Dinner
NEW DELHI-A specially curated vegan gala dinner hosted by Prime Minister Narendra Modi was a highlight of the BRICS Leaders’ Summit on September 12 at Bharat Mandapam, showcasing India’s culinary diversity and the themes of sustainability, inclusivity and mindful hospitality.
The multi-course dinner opened with Khandvi Mille-Fueille, delicate steamed gram-flour rolls tempered with mustard, coconut and curry leaves, served with kesar mango, micro-greens and a light yoghurt-style dressing. Khumb Galouti, pan-grilled mushroom kebabs with mint pearls on sheermal bread, was also served.
The main course featured Paneer Lababdar, with cottage-cheese-style cubes in a shallot-tomato gravy, and Gucchi Marmik, featuring Himalayan morel mushrooms and asparagus cooked with saffron, raisins and mamra almonds.
A South Indian-inspired Carrot Bean Poriyal, prepared in virgin coconut oil and finished with fresh grated coconut, was served alongside Thakkali Belle Saaru, a tomato-enriched toor dal broth with curry leaves. Millet Pulao made with basmati rice and pearl millets, Beetroot Raita and an assortment of Indian breads completed the savory selections.
Dessert included Old Delhi Fruit Cream with Jalebi, combining seasonal fruits and lightly whipped cream with a crisp sweet fritter, and Shahtoot Phirni, a slow-cooked rice and milk pudding topped with sweet mulberries and gold leaf. (IANS)
