Ingredients

  • 1 cup Basmati Rice
  • 1.5 cups water
  • 2.5 tbsp peanut oil
  • 2 tsp turmeric powder
  • 3 tbsp tamarind paste (homemade or store-bought)
  • Salt to taste
  • 1 tsp mustard seeds
  • 1 tbsp chana dal
  • 1/2 tbsp urad dal
  • A handful of peanuts
  • 2–3 dry red chilies
  • 2 green chilies (slit)
  • Fresh curry leaves

Preparation

  1. Wash the basmati rice and pressure cook it with water for 2 whistles.
  2. Once the pressure releases, transfer the rice to a mixing bowl and add 1/2 tbsp peanut oil, 1/2 tsp turmeric powder, and the tamarind paste. Mix gently and set aside.
  3. For tempering, heat peanut oil in a pan and add chana dal, peanuts, and urad dal. Fry until golden brown.
  4. Add mustard seeds, dry red chilies, slit green chilies, and curry leaves. Fry until everything is aromatic and crisp.
  5. Pour the tempering over the rice and mix well until evenly coated.
