LUCKNOW- Lucknow’s iconic Awadhi cuisine, refined over centuries in royal kitchens and historic eateries, is the focus of a proposal submitted to UNESCO by the Uttar Pradesh Culture and Tourism Department.

The aim is to secure the Creative City tag under the Gastronomy category for the city, recognizing its rich culinary heritage.

The city’s vibrant sweet traditions boast an array of signature delights that have endured for generations. These include Malai Gilori, Kulfi, Imarti-Rabri, Thandai, and Motichoor Laddos.

Lucknow’s street food culture is equally celebrated for its diverse and flavorful offerings. Popular items include khastey, chai-samosa, bun makkhan, kachori, basket chaat, morning mattha, Dahi Bara, makkhan malai, and kali-gajar ka halwa in winter

The city is also renowned for its melt-in-the-mouth kebabs and aromatic biryanis, which have gained international recognition. Top notch restaurants have been run for decades, never expanded, prioritizing quality over quantity and the owner aver that making these delicacies in small batches is the essence of Awadh.

Awadhi cuisine features unique preparations, including the world’s softest Kakori Kababs, Seek Kebabs, Roasted Kaleji, Pasanda Kebabs, Boti Kewabs, and Chicken Samosa. It also boasts a diverse range of breads like Sheermal, Rumali Roti, Girda, and Khameeri Roti.
