This egg and mashed potato omelet combine classic flavors to create a satisfying breakfast that helps keep hunger at bay well into midday.

Ingredients

  • ⅓ cup egg substitute
  • 2 egg whites
  • 4 tablespoons prepared mashed Idaho® potatoes
  • 1 heaping tablespoon fat-free Greek yogurt
  • 1 tablespoon thinly sliced green onion
  • 2 tablespoons grated low-fat cheddar cheese

Instructions

  1. Whisk together the egg substitute and egg whites.
  2. Prepare the omelet using the standard method, but do not fold it.
  3. Once the omelet is fully cooked, spread the mashed potatoes evenly over the top.
  4. Spoon the Greek yogurt over the potatoes.
  5. Sprinkle with green onion and grated cheese.
  6. Place briefly under a warmer or in the oven until the cheese melts.
  7. Serve immediately.
