Mango Horchata
Ingredients
- 1 cup Royal Authentic Basmati Rice
- 4 cups water, divided (2 cups for soaking, 2 cups for blending)
- 1 1/2 cups whole milk
- 1 cup evaporated milk
- 1/3 cup monk fruit sweetener, or to taste
- 2 ripe mangoes, peeled and diced
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon, plus extra for garnish
- Ice, for serving
Preparation
- Combine rinsed rice and 2 cups water in a bowl; soak for 3 hours or overnight.
- Drain the rice and add it to a blender with the remaining 2 cups water. Blend until very smooth.
- Strain through a fine-mesh sieve or cheesecloth into a pitcher, pressing the solids to extract as much liquid as possible.
- Stir in the whole milk, evaporated milk, monk fruit sweetener, vanilla extract, and 1/2 tsp cinnamon.
- Blend the diced mango with 1/4 cup of the horchata mixture, then fold it back into the pitcher for a swirled texture. For a smoother, uniform mango horchata, blend everything together instead.
- Refrigerate until well chilled. Serve over ice and garnish with diced mango and a sprinkle of cinnamon.
