Matcha Coconut Rice Pudding
Ingredients
- 1 cup Basmati Rice
- 4 cups beverage-style coconut milk
- 1/2 cup sugar
- 1/4 teaspoon fine sea salt
- 1/2 cup canned coconut milk
- 1 tablespoon matcha powder
- 1 teaspoon vanilla extract
- 1 cup strawberries, sliced
- 1/2 cup toasted flaked coconut
Preparation
- In a medium saucepan, combine rice and 2 cups of water. Place over high heat, bring to a boil, and cook for 5 minutes or until the water has evaporated.
- Stir in beverage-style coconut milk, sugar, and salt. Bring to a boil over medium-high heat, then reduce heat to medium-low. Simmer, partially covered, stirring occasionally, until the rice is very tender and creamy, about 40-45 minutes.
- Remove from heat and stir in canned coconut milk, matcha powder, and vanilla extract.
- Serve topped with sliced strawberries and toasted flaked coconut.
