Pine Nut Feta Rice
This recipe for Pine Nut Feta Rice is a flavorful and easy dish that can be served as a light lunch or a side for a larger meal.
Ingredients
- 1 cup Royal® Basmati Rice
- 2 cups water
- 1/2 white or yellow onion
- 1 tablespoon Grapeola® Grape Seed Oil or olive oil
- A handful of chopped fresh parsley or 1 teaspoon dried parsley (or your favorite herb like basil, thyme, or tarragon)
- 4 tablespoons crumbled Feta cheese
- Salt & black pepper to taste
- 2-3 tablespoons pine nuts or slivered almonds
Preparation
- Prepare Royal® Basmati Rice. This can be done up to one day in advance.
- While the rice cooks, dice the onion and mince the fresh parsley.
- Heat a well-dried frying pan over low heat and add the oil. Warm for 30 seconds, then add the diced onions. Increase heat to medium. Sauté the onions for 2-3 minutes, stirring often, until they are translucent.
- Gently stir in the cooked rice, using a fork to break apart the grains if needed. Stir to combine the rice and onions. Sauté for 3 minutes.
- Mix in the parsley, salt, pepper, and Feta cheese. Cook the rice for 3 minutes so the flavors blend. Stir occasionally to prevent the rice and cheese from sticking to the bottom of the pan.
- Once the ingredients are well mixed and hot, turn off the heat.
- Place the rice in a serving dish and garnish with pine nuts. Sprinkle more parsley over the dish if desired.
- Serve hot.
