Zucchini And Rice Fritters
Ingredients

| Zucchini, shredded | 1 1/2 cups |
| Chickpeas flour (Besan) | 1/2 cup |
| Cooked Royal® Basmati Rice | 3/4 cup |
| Split roasted chickpeas (Dalia) | 1/4 cup |
| Red chili powder | 2 tsp |
| Turmeric powder | 1/2 tsp |
| Cumin seeds | 1/4 tsp |
| Asafetida powder (Hing) | 1/4 tsp |
| Salt | As needed |
| Oil | 2 cups |
Preparation
1. Shred the zucchini and use a clean cloth or strainer to squeeze and strain the water out completely.
2. In a mixing bowl, combine the strained zucchini and the cooked Basmati rice (ensure the rice has cooled completely before mixing).
3. Add the split roasted chickpeas (Dalia), red chili powder, salt, turmeric powder, asafetida powder, and cumin seeds to the zucchini and rice mixture.
4. Gradually add the chickpea flour (Besan) and slowly mix it together until a thick dough-like consistency is formed.
5. Pour the oil into a frying pan or deep pot and heat until it is hot enough for frying.
6. Once the oil is hot, carefully drop the mixture by spoonfuls (to make the fritters, or pakoras) into the hot oil. Fry until they are crispy and golden brown on both sides.
7. Remove the fritters and drain excess oil on paper towels. Serve immediately along with a chutney of your choice and enjoy.
