Easy Kid-Friendly Fried Rice

Ingredients

  • 2 packs (8.5 oz each) Royal® Microwaveable White Basmati Rice
  • 3 tbsp canola oil, divided
  • 4 eggs, beaten
  • Pinch of salt and pepper
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup frozen peas and carrots
  • 2 tbsp soy sauce
  • 4 green onions, thinly sliced

Preparation

  1. Heat 4 tsp of the oil in a large skillet over medium heat. Add the eggs, season with salt and pepper, and cook, stirring, for 3 to 5 minutes, or until soft curds form. Transfer to a plate.
  2. Wipe the skillet clean with a paper towel.
  3. Heat the remaining oil in the same skillet over medium-high heat.
  4. Cook the onion, garlic, and ginger for 2 to 3 minutes, or until fragrant.
  5. Stir in the rice and frozen peas and carrots. Cook for 3 to 5 minutes, stirring occasionally, until well combined. Stir in the soy sauce and cook for another 2 to 3 minutes, or until the rice and vegetables are heated through.
  6. Fold in the scrambled eggs.
  7. Sprinkle with the green onions before serving.

Tip

This family favorite is also great the next day for an easy back-to-school lunch. Serve it in large lettuce leaves drizzled with sesame dressing for fried rice salad cups, toss it with hearty greens and your favorite herb dressing for a quick fried rice salad, or roll it up in tortillas with shredded lettuce, guacamole, and a drizzle of barbecue sauce for a fried rice burrito.
