This Loaded Taco Plate brings vibrant, fresh flavors to your table in just 15 minutes.

Ingredients

  • 1 pouch Royal® Mexican Style Rice & Street Corn
  • 6 oz steak (flank, skirt, or your choice), thinly sliced
  • ½ cup black beans (drained and rinsed)
  • ¼ cup diced tomatoes or pico de gallo
  • ¼ cup corn kernels (fresh, canned, or frozen)
  • ¼ avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges
  • Taco seasoning or fajita seasoning
  • Olive oil

Preparation

  1. Season the steak with taco or fajita seasoning. Heat a skillet with olive oil over medium-high heat and cook the steak slices for 3-4 minutes per side, or until they reach your desired doneness. Let the steak rest briefly, then slice it thinly if you haven’t already.
  2. Microwave the pouch of Royal® Mexican Style Rice & Street Corn according to the package directions.
  3. In a bowl, create a layer with the microwaved rice, black beans, corn, diced tomatoes or pico de gallo, and the cooked steak slices.
  4. Garnish the plate with avocado slices and a sprinkle of fresh cilantro.
  5. Serve immediately with lime wedges for squeezing over the top.
