Ingredients
- 1 pouch Royal® Mexican Style Rice & Street Corn
- 6 oz steak (flank, skirt, or your choice), thinly sliced
- ½ cup black beans (drained and rinsed)
- ¼ cup diced tomatoes or pico de gallo
- ¼ cup corn kernels (fresh, canned, or frozen)
- ¼ avocado, sliced
- Fresh cilantro, chopped
- Lime wedges
- Taco seasoning or fajita seasoning
- Olive oil
Preparation
- Season the steak with taco or fajita seasoning. Heat a skillet with olive oil over medium-high heat and cook the steak slices for 3-4 minutes per side, or until they reach your desired doneness. Let the steak rest briefly, then slice it thinly if you haven’t already.
- Microwave the pouch of Royal® Mexican Style Rice & Street Corn according to the package directions.
- In a bowl, create a layer with the microwaved rice, black beans, corn, diced tomatoes or pico de gallo, and the cooked steak slices.
- Garnish the plate with avocado slices and a sprinkle of fresh cilantro.
- Serve immediately with lime wedges for squeezing over the top.
