Greek Chopped Rice Salad
Ingredients
- 1 cup Basmati Rice
- 1 small cucumber, diced
- 1/2 red onion, diced
- 1 medium tomato, diced
- 1/2 cup canned chickpeas, drained and rinsed
- 1/3 cup crumbled feta
- 1/3 cup Kalamata olives
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 teaspoon minced fresh oregano (or 1/4 teaspoon dried)
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
Preparation
- Combine rice and 2 cups of water in a medium saucepan. Bring to a boil, then cover and reduce heat to a simmer. Cook until tender, about 20 minutes.
- Once cooked, spread the rice out on a plate to cool completely.
- In a medium bowl, toss together the cooled rice, cucumber, onion, tomato, chickpeas, feta, olives, vinegar, oil, garlic, oregano, salt, and pepper.
- Serve at room temperature or chilled.
