Pulihora
Ingredients
- 1 cup Basmati Rice
- 1.5 cups water
- 2.5 tbsp peanut oil
- 2 tsp turmeric powder
- 3 tbsp tamarind paste (homemade or store-bought)
- Salt to taste
- 1 tsp mustard seeds
- 1 tbsp chana dal
- 1/2 tbsp urad dal
- A handful of peanuts
- 2–3 dry red chilies
- 2 green chilies (slit)
- Fresh curry leaves
Preparation
- Wash the basmati rice and pressure cook it with water for 2 whistles.
- Once the pressure releases, transfer the rice to a mixing bowl and add 1/2 tbsp peanut oil, 1/2 tsp turmeric powder, and the tamarind paste. Mix gently and set aside.
- For tempering, heat peanut oil in a pan and add chana dal, peanuts, and urad dal. Fry until golden brown.
- Add mustard seeds, dry red chilies, slit green chilies, and curry leaves. Fry until everything is aromatic and crisp.
- Pour the tempering over the rice and mix well until evenly coated.
