Bael – Wood Apple – Squash
Ingredients
· Bael juice: 1 liter
· Sugar: 1½ kg
· Water: 1 liter
· Citric acid: 4 tsp
· Potassium meta bisulphite: 600 mg/kg of finished product
Method
1. Extract pulp with the help of a spoon.
2. Remove seeds and fiber.
3. Add double the quantity of water to its weight and leave overnight.
4. The next day, rub the pulp and strain the juice by passing it through a stainless-steel strainer.
5. Mix sugar, citric acid, and water, then boil. Remove scum and strain through a muslin cloth.
6. Mix juice and syrup when it is cool. Dissolve potassium meta bisulphite in a small quantity of squash and add this to the entire quantity.
7. Fill squash into dry, sterilized bottles, leaving 2.5-3.5 cm space at the top.
8. Seal the bottle and store in a cool, dry place.
