Yellow Rice Roll- Up
Ingredients

| Royal® Yellow Rice | 1 pouch (cooked and slightly cooled) |
| Flour Tortillas (8-inch) | 4 |
| Canned Black Beans | 1 cup (drained, rinsed, and lightly smashed) |
| Monterey Jack Cheese, shredded | 1 cup |
| Olive oil or Butter | 1 tbsp (for pan-searing) |
Optional: serve with a dip like creamy avocado or mild chili salsa ranch dip; add chopped cilantro or lime wedges
Preparation
- Prepare the Rice: Microwave the pouch of Royal® Yellow Rice according to package directions (90 seconds). Let it cool for 1–2 minutes.
- Assemble the Rolls:
- Lay a flour tortilla flat.
- Sprinkle a quarter of the Monterey Jack cheese across the surface, leaving a small border.
- Spoon about one – fourth of the yellow rice and a few tablespoons of the gently mashed black beans evenly over the cheese.
- Roll and Seal: Tightly roll the tortilla into a log, pressing gently to seal the seam. Repeat this process with the remaining tortillas.
- Pan-Sear: Heat olive oil or butter in a large skillet over medium heat. Place the rolls seam-side down and cook for 2–3 minutes per side, until they are golden and crisp.
- Slice and Serve: Let the rolls cool slightly, then slice them into 1-inch spirals.
