Ingredients

Royal® Yellow Rice1 pouch (cooked and slightly cooled)

Canned Black Beans1 cup (drained, rinsed, and lightly smashed)
Monterey Jack Cheese, shredded1 cup
Olive oil or Butter1 tbsp (for pan-searing)

Optional: serve with a dip like creamy avocado or mild chili salsa ranch dip; add chopped cilantro or lime wedges

Preparation

  1. Prepare the Rice: Microwave the pouch of Royal® Yellow Rice according to package directions (90 seconds). Let it cool for 1–2 minutes.
  2. Assemble the Rolls:
    • Lay a flour tortilla flat.
    • Sprinkle a quarter of the Monterey Jack cheese across the surface, leaving a small border.
    • Spoon about one – fourth of the yellow rice and a few tablespoons of the gently mashed black beans evenly over the cheese.
  3. Roll and Seal: Tightly roll the tortilla into a log, pressing gently to seal the seam. Repeat this process with the remaining tortillas.
  4. Pan-Sear: Heat olive oil or butter in a large skillet over medium heat. Place the rolls seam-side down and cook for 2–3 minutes per side, until they are golden and crisp.
  5. Slice and Serve: Let the rolls cool slightly, then slice them into 1-inch spirals.
