Zucchini Bread With Garam Masala

Ingredients

  • 3 cups Royal® Chakki Atta
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon garam masala
  • 3 eggs
  • 1 cup Grapeseed Oil
  • 2 cups white sugar
  • 1 tablespoon vanilla extract
  • 2 cups grated zucchini

Preparation

  1. Grease a 12-cup muffin pan or line with muffin liners. Preheat oven to 325° F.
  2. Whisk Royal® Chakki Atta, salt, baking powder, baking soda, and garam masala together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl.
  4. Add the dry ingredients to the creamed mixture and mix until just combined.
  5. Fold in the grated zucchini.
  6. Pour batter into the prepared pan.
  7. Bake for 18–25 minutes, or until a tester inserted in the center comes out clean.
  8. Cool in the pan for 3–5 minutes, then turn out the muffins and let them cool on a rack.
