Hot Honey Chicken Curry

Ingredients

  • 1 lb chicken thighs
  • 1/4 cup plain yogurt
  • 1 1/2 tbsp ghee
  • 1 large onion, finely diced
  • 2 tomatoes, roughly chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 tbsp hot honey
  • 1/4 cup water or chicken stock
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • 3/4 tsp Kashmiri chili powder
  • 1/2 tsp garam masala
  • 3/4 tsp salt
  • Lemon juice, to finish
  • Fresh cilantro, to finish

Preparation

  1. Marinate the chicken with yogurt, turmeric, half the salt, and half the Kashmiri chili powder. Let rest for at least 30 minutes.
  2. Heat ghee in a pan and cook the onions until deep golden brown, about 15 minutes.
  3. Add the garlic and ginger; cook for 2 minutes.
  4. Add the coriander, cumin, and remaining Kashmiri chili powder. Toast for 1 minute.
  5. Add the tomatoes and remaining salt. Cook until the oil separates, about 10 minutes.
  6. Add the marinated chicken and sear for 3–4 minutes per side.
  7. Pour in the stock and hot honey. Cover and simmer for 20 minutes, or until the chicken is cooked through.
  8. Finish with garam masala, lemon juice, and fresh cilantro. Serve with Royal Basmati rice.
