Hot Honey Chicken Curry
Ingredients
- 1 lb chicken thighs
- 1/4 cup plain yogurt
- 1 1/2 tbsp ghee
- 1 large onion, finely diced
- 2 tomatoes, roughly chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1/2 tbsp hot honey
- 1/4 cup water or chicken stock
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/4 tsp turmeric
- 3/4 tsp Kashmiri chili powder
- 1/2 tsp garam masala
- 3/4 tsp salt
- Lemon juice, to finish
- Fresh cilantro, to finish
Preparation
- Marinate the chicken with yogurt, turmeric, half the salt, and half the Kashmiri chili powder. Let rest for at least 30 minutes.
- Heat ghee in a pan and cook the onions until deep golden brown, about 15 minutes.
- Add the garlic and ginger; cook for 2 minutes.
- Add the coriander, cumin, and remaining Kashmiri chili powder. Toast for 1 minute.
- Add the tomatoes and remaining salt. Cook until the oil separates, about 10 minutes.
- Add the marinated chicken and sear for 3–4 minutes per side.
- Pour in the stock and hot honey. Cover and simmer for 20 minutes, or until the chicken is cooked through.
- Finish with garam masala, lemon juice, and fresh cilantro. Serve with Royal Basmati rice.
