Stuffed Bitter Gourd
Ingredients
- Bitter gourd: 4 medium-sized
- Onion: 4 medium-sized, chopped
- Oil: ¼ cup
- Coriander powder: 1 tbsp
- Garlic paste: 1 tbsp
- Cumin powder: 1 tsp
- Ginger paste: 1 tsp
- Mango powder (Amchur): 1 tsp
- Turmeric powder: ¼ tsp
- Black pepper: ¼ tsp
- Red chili powder: ¼ tsp
- Fenugreek seeds: ¼ tsp
- Salt: To taste
Method
- Prepare the onion:
Wash and chop the onions. - Prepare the bitter gourd:
Cut the bitter gourd lengthwise into halves without separating them completely. Scoop out the seeds. Boil the bitter gourds for a few minutes to soften them slightly. - Prepare the stuffing:
Heat 3 tablespoons of oil in a pan. Add the chopped onion, garlic paste, and ginger paste. Fry until golden brown. - Add the spices:
Add all the spices, and salt to the onion mixture. Fry until the spices are well cooked. - Stuff the bitter gourd:
Stuff the cooked mixture into the prepared bitter gourds. - Fry the stuffed bitter gourd:
Heat the remaining oil in a heavy pan. Place the stuffed bitter gourds in the pan, cover with a lid, and cook on low heat until they are golden and crispy on all sides. Turn occasionally for even cooking. - Serve:
Once cooked, remove the stuffed bitter gourds from the pan and serve hot.
