Stuffed Bitter Gourd

Ingredients

  • Bitter gourd: 4 medium-sized
  • Onion: 4 medium-sized, chopped
  • Oil: ¼ cup
  • Coriander powder: 1 tbsp
  • Garlic paste: 1 tbsp
  • Cumin powder: 1 tsp
  • Ginger paste: 1 tsp
  • Mango powder (Amchur): 1 tsp
  • Turmeric powder: ¼ tsp
  • Black pepper: ¼ tsp
  • Red chili powder: ¼ tsp
  • Fenugreek seeds: ¼ tsp
  • Salt: To taste

Method

  1. Prepare the onion:
    Wash and chop the onions.
  2. Prepare the bitter gourd:
    Cut the bitter gourd lengthwise into halves without separating them completely. Scoop out the seeds. Boil the bitter gourds for a few minutes to soften them slightly.
  3. Prepare the stuffing:
    Heat 3 tablespoons of oil in a pan. Add the chopped onion, garlic paste, and ginger paste. Fry until golden brown.
  4. Add the spices:
    Add all the spices, and salt to the onion mixture. Fry until the spices are well cooked.
  5. Stuff the bitter gourd:
    Stuff the cooked mixture into the prepared bitter gourds.
  6. Fry the stuffed bitter gourd:
    Heat the remaining oil in a heavy pan. Place the stuffed bitter gourds in the pan, cover with a lid, and cook on low heat until they are golden and crispy on all sides. Turn occasionally for even cooking.
  7. Serve:
    Once cooked, remove the stuffed bitter gourds from the pan and serve hot.
